Heart of palm salad with summer tomatoes, avocado and fresh corn

I whipped this up yesterday from things I found in the fridge and it was awesome and beautiful to look at. I didn’t think to take a pic of it until I’d nearly nibbled it out of existence, but I restrained myself and got a wee shot. The proportions of the ingredients are very flexible. I had it with some jerk chicken and garlic bread. You could toss in some EVOO if you want to cut the acidity a bit, but I didn’t.

Heart of palm salad

Ingredients

  • 1c. heart of palm, sliced in rounds
  • 1c. fresh corn, cooked and removed from the cob
  • 1medium tomato, cubed
  • 1/2 avocado, cubed
  • fresh cilantro, about a handful of stems and leaves chopped roughly
  • 1/2 a lime, juiced
  • hot sauce to taste (I used Calypso brand of hot sauce)
  • sea salt
  • freshly ground pepper

Gently toss heart of palm, fresh corn, tomatoes, avocados, fresh cilantro, lime juice, hot sauce. Add salt and pepper to taste. Dig in!
