Minty Watermelon Lime Chia Agua Fresca

A sugar-free refreshing summer beverage made from watermelon, lime, mint and chia seeds. I was looking into sugar free beverages that one can have on the Whole 30 food plan. My boyfriend is on it until October 8th.

Ingredients

  • 2 pounds watermelon pulp
  • 1/3 cup lime juice
  • 16 fresh mint leaves
  • 2 teaspoon chia seeds
  • 1/4 cup water
  • Simple syrup (optional)

Directions

  1. Soak the chia seeds in 1 the water for 15 minutes Pulverize the watermelon with in a blender or nutribullet. Pour the watermelon juice through a fine strainer to remove the pulp.
  2. Mix in the lime juice and taste. You can add some simple syrup if you want it sweeter, but I found that the watermelon made it sweet enough.
  3. Pour over ice, garnish with mint sprigs and lime wheels. Drink!
