Jackie created “Seasons of Beef,” a live eatertainment show for the Texas Beef Council, at the Southwest Food Expo, in Dallas. One aim of the project was to teach people that beef has the sixth taste, umami, which is illustrated by this tune she wrote for the show.

Oooh Mommy It’s The Umami

When I talk about umami,
I think about my mommy,
Always striving to create,
Beef dishes that taste great,
Never knowing it was just a case of pairing glutamates.

But, alas her food was scary,
At her best—just ordinary.
If only the Japanese
Shared their taste discoveries
With my mother then she could have been an umami-swami.

Her cooking would take on a whole new direction.
She’d whip up burgers that screamed with perfection.
She’d top them off with some aged cheddar cheese.
Oh, the tasty combo made me weak in my knees.

I’d say, “Oooooh! Mommy, that burger’s delish.”
She’d say, “Honey, that’s the umami.”
Ooooh! Mommy, my taste buds are getting their wish!
She’d say, “Baby, that’s the umami.”

What my momma would do with a humble beef stew,
Add potatoes, tomatoes, a few carrots, too.
She’d cook it off slow with a dose of red wine.
The next day the flavor would just be divine

I said, “Oooooh! Mommy, that stew sure tastes yum!”
She’d say, “Honey, that’s the umami.”
“Oooooh! Mommy, it’s doing a dance on my tongue”
She’d say, “Baby, that’s the umami.”

Can you imagine the magic she’d make
With sauteed mushrooms and porterhouse steak?
She’d pile them ’shrooms high on the mighty T-bone.
I’d take one bite and I’d say with a moan…

I said, “Oooooh! Mommy, that steak’s off the hook!”
She’d say, “Honey, that’s the umami.”
“Oooooh! Ma, it’s the best one that you evah cooked!”
She’d say, “Baby that’s the umami.”

Changing my mom’s cuisine may just be a dream,
But that’s not the sentence for you:
Use umami combos when you prepare beef
And your guests will be tasting it, too.

They’ll say, “Oh my, this beef sure tastes great,”
And you’ll say, “It’s the umami.”
They’ll be all smiles as they’re licking the plate,
And you’ll know it’s Umami,
Umami.
