Recipe: Green Apple Cucumber Raita

Perfect for cooling the heat of curry or as a side dish for a BBQ. I had extra apples so I whipped up this raita recipe.

Green Apple Cucumber


  • 1 Granny smith apple, diced
  • 2 Lebanese cucumbers, diced (leave skins on)
  • 1 bunch of scallions, trimmed and sliced thin
  • kosher salt
  • 1.5 c yogurt
  • handful of mint leaves, chopped (optional)
  • freshly ground pepper

Combine apple, cucumber, and scallions in a bowl and sprinkle with salt. Let sit for at least a half hour and drain, add yogurt, mint and pepper. Adjust seasoning if necessary.

Can be made several hours ahead and refrigerated.
