A simple syrup made of Concord grapes and sugar to be used for drinks, dessert and even savory recipes.
- 5 pounds stemmed concord grapes
- 32 ounces water
- 1 cup sugar
- 1/4 tsp kosher salt
- In a large, heavy-duty saucepan, combine grapes, water, sugar, and salt over a medium flame. Pulverized mixture lightly with an immersion blender.
- Cook mixture for 45 minutes. Pour the mixture through a strainer, scraping it with a rubber spatula until all that’s left is the seeds and a little pulp. Discard the seeds.
- Store in the refrigerator or freeze.
Yield: 2 quarts
